To make the houmous, the chickpeas are soaked overnight, boiled, and then blended with the other ingredients. It’s a three-day process overall.
Chickpeas are a blank canvas, meaning you can do lots of things with them, Hazan explains.
However, they are also a very challenging pulse – meaning it’s important to source them from reliable countries, she adds.
“They are very volatile, so getting a consistent product isn’t easy. Some might absorb less water, while others may cook softer – every batch of chickpea you receive is different,” says Hazan.
“Despite this, the manufacturing process is relatively straightforward.”
