The marzipan starts life as a sheet. It then goes into rollers to be cut into designated shapes.
“A typical rolling machine starts at about £3,500 for one roll shape. Given the run lengths involved in marzipan making, many would suggest it isn’t worth the investment,” explained Astill.
“However, we are prepared to mix the usage – therefore, a shape that sits on top of a Christmas cake may also sit on top of an Easter cake. It’s about trying to make it work to fit the quantities that are involved with the customers.”
