The conference was chaired by former president of the Institute of Food Science and Technology and former director general of Campden BRI Professor Colin Dennis. Speakers included representatives from the Food Standards Agency (FSA), Chartered Institute of Environmental Health, Society of Food Hygiene and Technology, Aon, Institute of Food Research and Bernard Matthews.
