Dairy dessert with longer shelf-life

The traditional Indian dairy-based dessert Rasmalai is considered to be a delicacy in Indian and Pakistani cultures. Being dairy-based, its manufacturers and distributors have always had to manage the issue of its short shelf-life.

Canada-based family-run food manufacturer Punjab Milk Foods says it has found a way around this problem. It has researched a way of processing the product at the post- pasteurisation stage that gives it a one-year shelf-life in the freezer. It also claims that it will survive in the fridge for up to two months once it has been defrosted.

Rasmalai is produced in Canada but available in UK speciality stores.
