Christmas is a boom time for Stilton maker Billy Kevan, dairy manager at Colston Basset Dairy in Nottinghamshire.

But while the seasonal spike in a welcome boost to business, he is proof that small, specialist firms can also reap big rewards in the export market.

In this exclusive podcast for FoodManufacture.co.uk, he explains how he increased export levels to 15% of the dairy's 400t annual production.

Forward thinking
He discusses how his firm has worked with a third party to tap into overseas demand and reveals how a bit of forward-thinking can open up new export markets – even in times of recession.

Also hear how a small business manages to cope with seasonal increases in demand as shoppers seek to stock up on Stilton in time for Christmas.

Don't miss our Me and My Factory Feature with Kevan in January's edition of our sister magazine Food Manufacture.
