Ketchup leather solves soggy bread problem
An LA chef unveiled a square of ‘Ketchup leather’ to stop moist sauce making his burger buns soggy.
Ernesto Uchimura invented the square of hard ketchup at his restaurant Plan Check.
You can watch a video of Uchimura blending tomato paste with soy sauce, garlic and other spices before drying it out in the oven and cutting into squares in the video below.
