Campylobacter presents a huge challenge for the UK poultry industry, with processors and retailers racing to eradicate its contamination of raw chickens. The Linde Group was on hand to showcase its Preventum Rapid Surface Chilling Technology as the latest weapon against the food poisoning pathogen.
The approach blasts chicken carcases fed through a tunnel with cryogenic liquid nitrogen at a temperature of -196oC and Linde claims that results in a 90% reduction of the bacteria on the skin.
The company was also displaying the Cryoline PE800, its new cryogenic freezer, enabling food pellets to be separated into individual portions.
It combines the stabilising and light freezing of pellets on a steel conveyor with their subsequent freezing in a tunnel, allowing for a more efficient use of cryogenic liquid nitrogen than two separate devices.
And, away from the realm of freezing, Linde had it all wrapped up with its new MAPAX LD system. The innovation used hydrogen gas to detect defects in modified atmosphere packaging in a way that did not damage the packaging itself, unlike some other methods, and delivers speedy results. It can also be integrated seamlessly into the production line.
