‘Put fun back into bakery’
Snacking, healthy food and experimental consumers are three top trends that the bakery industry needs to get to grips with, according to market research organisation Mintel.
Mintel research manager Chris Brockman told an FiE conference that the industry needs to “put the fun back into bakery” by creating more flavours, formats and healthy options.
“There is much more innovation potential for the bakery industry to engage consumers who are perhaps reappraising the role of bakery products in their diet,” Brockman said.
“There’s a real opportunity for the bakery market – and bread in particular – to compete as a snack out of the home. That’s where competition is diluting their share of the market.”
