Professor Colin Dennis
Chair of the conference Professor Colin Dennis discussed changes in the food industry and how they might affect food safety.
Dennis: “Food safety is a complex subject that has been a fundamental, continuing concern to anybody that works in the food sector for many years and I’m sure it will continue to be so for many more years.
“We have changes in food processing and production; we have changes in food consumption patterns and the types of product we are exposed to and the emergence of different food safety hazards.
“We have to think about the whole supply chain in thinking about food safety strategies and we also have to grapple with a changing regulatory framework, with increase in our sensitivities and the methods we can use to detect contaminates or organisms that might not be good for us.
“Our food supply chain has always been global and international [but] it is increasingly so. So we are getting some ingredients and products coming from various parts of the world with different regulatory frameworks and enforcement practises, which contribute to greater or lesser food safety issues.”
