Five-strong honey range goes back to nature

A flavour producer has worked with a beekeeping society to develop five recognisable ‘true-to-nature’ honey variants.

Prompted by the increasing popularity of honey among consumers, Synergy Flavours has launched a range consisting of five distinct profiles – honeycomb, mild honey, dark honey, floral honey and the much vaunted manuka honey.

Via extensive analysis and testing of honey samples, Synergy’s flavourists say they have captured the novel characteristics of each flavour.

Liquid and spray dry formats

Available in liquid and spray dry formats, the all-natural flavours can be tailored to suit specific dietary requirements, including halal and vegan.

They can also be incorporated into products from a wide variety of sectors, such as dairy, bakery, beverages, savoury and sports nutrition.

The company claimed the new range offers manufacturers the versatility to create honey-flavoured products that resemble the characteristics of the raw material.

‘Demand for honey’

Philip Ashman, junior flavourist at Synergy, said: “We monitor flavour trends and have developed this versatile range in line with the rising demand for honey products.

“Now a regular feature on many restaurant menus and a key influence for regional cuisines, honey is crossing the borders between different applications.

“This includes sweet formats such as dairy, cereals, alcoholic drinks and bakery, as well as savoury soups, dressings and meat dishes.”
