Lemon myrtle from Oz

An ingredients importer is claiming that an Australian medicinal bush spice that combines the tartness of lemon with the sweet flavour of basil will be the next big food trend.

EHL Ingredients describes Lemon Myrtle (Backhousia citriodora) as "a delicate citrus herb that is highly versatile for use in many food and drink products".

Sales director Tasneem Backhouse says: "We decided to launch the product following demand from our customers for a quality, versatile lemon myrtle herb and we trialled many varieties before selecting our unique blend."

Demand for unusual herbs is growing as consumers become more knowledgeable about international flavours, thanks to travel and cookery shows, etc.

Backhouse says: "It's essential for food manufacturers to stay ahead of these trends and ensure they recreate flavours and dishes well enough to ensure a successful and popular end product."

The herb is available dried as a herbal tea mix, ready to be sold in tea bags on store shelves, or in bulk for adding to tea blends. In foods, the herb can be used as a replacement for lemongrass, lemon zest or instead of the kaffa lime leaf in Asian-style cuisine.

Uses include flavouring for Australasian fish and poultry dishes, sauces, marinades, salad dressings and dips such as mayonnaise and aioli.
