CSM says doughs made using RKD Clean improver will be less sticky, which makes processing and handling easier. Doughs remain more stable during processing, giving bakers more flexibility in production while maintaining product consistency. Bakers will also benefit from the conditioner's ability to deliver improved volume, crumb, texture and superior crust and external appearance of the finished product.
RKD Clean works with the baker's standard flour and is suitable for the production of a range of white and wholemeal bread products including bread, rolls and morning goods. Bakers who use this improver should have no need to adjust their standard.
The firm has extended the functionality of the improver to create a bespoke formulation.
