Apple Engineering has developed a new series of positive pressure manifold depositors. The new PPM40, for example, has several useful features, including the ability to handle delicate products and reduced product rejection.

Designed to work products such as mousses and mallows, the versatility of the PPM40 means that products ranging from batters (with inclusions), fondants and potato can also be deposited or injected in a highly controlled manner. Makers of bubble chocolate bars will find the unit beneficial as positive pressure ensures the bubbly structure remains intact during deposition.

With fewer components than other depositing systems, downtime required for stripping and cleaning is also reduced.
