Compared with traditional methods the Microfilm confectionery cooker is claimed by APV Baker to offer greater product variety, better quality, and higher operational efficiency.
The system, used in over 400 installations worldwide for sugar and sugar-free high boiled and hard candies, has been upgraded.
Touch-sensitive human-machine-interface screens and programmable logic controllers are now standard and include features such as on-screen trending of process parameters to improve real-time process control, as well as information for trouble-shooting and longer-term process development. Recipe control and system alarm management are also incorporated.
Other changes are better product visibility at the point of discharge, a stainless steel frame, and a discharge pump for the handling of high-sugar syrups.
The Microfilm applies a continuous vacuum directly on to a thin swept film during cooking. "This results in extremely rapid cooking with minimum process inversion," says APV's Keith Graham.
Depositing lines which incorporate the cooker have an output capability of 1,400kg/h from a single cooker and a single depositing head. The largest depositors in the range have a width of 1.3m and can provide candies with one or two colours, soft centres, layers, and stripes.
