Listeria is widely recognised as a universal problem for food and drink manufacturers. To ensure effective listeria management and control, food and drink manufacturers need to ensure they’ve taken every possible step to mitigate the risk of problems arising. Drainage, a known source of listeria, is critically important. This paper has been produced to highlight the essential steps readers should take with regard to their drainage systems in order to minimise the presence of listeria in their manufacturing facilities and optimise food safety.
