Bespoke sauces and soups manufacturer Mustard Foods has invested in a series of Rational ovens to serve its restaurant chain customers across the UK and Europe.

The London-based company has installed seven VarioCookingCenter (VCC) 211+ units with a pressure cooking option – which can handle thousands of meals a day – as well as two SelfCookingCenter (SCC) 201 ovens and one SCC 202 model.

Mustard Foods is also using Rational’s ConnectedCooking platform so it can monitor and control the units remotely.

Meeting specifications

“For some clients, we’ll regularly prepare up to 10 batches of a single recipe across multiple shifts in one day,”​ said Mustard Foods operations manager Ashley Lotcho. “Making sure everything is produced to our clients’ specifications is essential.”

Rational claimed its appliances were capable of replacing a wide range of conventional equipment. The VCC combines the functions of a kettle, sous vide, fryer, griddle, bratt pan and frying pan, while the SCC combi oven is capable of roasting, baking, grilling, steaming, poaching and stewing.

Together, the ovens handle Mustard Foods’ full product range, which exceeds 180 items, including soups, sauces, salsas, chillies, dressings and slow-cooked proteins.
