The system uses a ‘first-in, first-out’ approach with the assistance of a mechanical unit that provides the storage capacity or process time required for a variety of fermentation, cooling, freezing and storage operations.
The MVS’s adjustable dimensions allow it to accommodate layout flexibility and to be adapted to any baking supports, such as peelboard, flat, cored and recessed trays, strapped moulds, etc.
“We have developed our own chains and angle bars internally with [the] support of mould manufacturers and specialists in high performance plastic materials,” says Mecatherm president Oliver Sergent.
“The result is a self-cleaning machine, as we have eliminated all flour and dust build-up zones.”
