Clean-label glaze cuts costs and extends shelf-life

Clean-label starch specialist Ulrick & Short has extended its range of clean-label non-genetically modified glazes, to include Eziglaze C, which is suitable for freshly baked goods and is declarable as wheat.

Ulrick & Short’s starches are supplied as powder so they can be stored at ambient temperature for up to two years – which is an advantage over egg, milk and other commercial glazes.

Simple to dissolve in cold water, the glazes are suitable for use in both craft bakeries and automated applications.

Ulrick & Short director Adrian Short explains: “Dairy prices – especially egg prices – are constantly in flux – usually upwards – and the Eziglaze range offers a superior performance alternative at a stable price, with significant added benefits of extended ambient storage and ease of use.

“These glazes can be applied by spray, spinning disc or brush, pre- or post-bake while still hot. Eziglaze tends to build colour later in the baking process than egg or milk and, as a result, browning tolerance and glaze longevity are considerably enhanced.”
