Ingredion's new functional native starch - Indulge 1720 - is a clean-label co-texturiser designed to enable dairy manufacturers to deliver thick and creamy - yet cost-effective - indulgent yogurt products.

The product replaces protein to lower overall ingredient costs, while delivering premium yogurt products in line with clean-label trends. Labelled simply as a 'starch' in the EU, Novation Indulge 1720 can also substitute gelatine in formulations. Ingredion says the product's "excellent process tolerance"​ makes it easy to use and it has high efficiency at low usage levels.

Mona Rademacher, dairy marketing manager at Ingredion Germany, says: "Greek-style yogurt is a huge trend in Europe, Middle East and Africa right now, with the number of product launches growing by 921% in the last five years. Consumers want additive-free yogurt products that still deliver a satisfying thick and creamy texture.
