Stable Micro Systems has launched the Meullenet-Owens Razor Shear (MORS) blade - a tool for measuring poultry tenderness.

The MORS method uses an extremely sharp craft knife blade of defined dimensions, attached to a texture analyser, to conduct a cutting/shearing test. Because the blade is narrow and penetrates to only 20mm, the MORS test makes only a small incision into the sample, causing less damage than traditional instrumental or human cutting tests. Repeatability is optimised because the blade can be removed and replaced regularly to ensure edge sharpness.

Stable Micro Systems says trials show the blade can perform 60 measurements an hour and the system has a higher correlation with human sensory test results while testing just as reliably as other instrumental methods but faster. Tests are conducted on whole intact fillets for simpler, faster testing with fewer errors attributable to sample preparation. Significant savings are promised in routine quality control.
