'Landmark innovation' claimed in red drinks

Chr Hansen is claiming that the "outstanding stability" of its new range of bright and intense red, vegetable-based colours is a "landmark innovation" .

The new Ultra Stable Red solutions are designed for colouring carbonated soft drinks, juice-based drinks, sports and energy drinks, and vitamin waters.

The range is based on blends of anthocyanins: colour pigments extracted from vegetable sources such as grape skin and black carrot.

The stability of the Ultra Stable Red solutions in beverages is said to be 3040% better than existing anthocyanin colours. This translates into a significant extension of the shelf-life, as well as cost savings due to less scrapping of faded beverages and no expenses for bottles with UV filter.

Ellen Hemme, industry product manager for Chr Hansen's natural colours division, says: "To avoid poor-looking drinks jeopardising their brand, producers have had to accept shortened shelf-life, high scrapping rates or the use of costly bottles with an integrated UV filter that can prevent or defer the fading process."
