Accurate injection ensures meat quality

Schroeder has developed a meat injector with a built-in weighing system to provide continuous measurement and automatic regulation of the injection rate. The new system is now installed in the IMAX IT injector.

The trend is for low-injected/low-salt products so regular monitoring is common, albeit manually. Small samples are weighed, injected and then re-weighed at intervals to check brine pick-up. On high-volume lines (5 6t/h) this check is often hourly, so interim mistakes can be costly. These random checks are recorded for internal audit but the IMAX IT records this information in real time.

Existing weighing systems can utilise independent scales upstream and downstream of the injector but these only record the weight of large batches.

James Radcliffe, product manager of Interfood, which distributes the equipment, says: "The machine uses specially selected scales that have not previously been employed in the meat industry in this form. The cells are very durable and enclosed in a stainless steel block to conform to hygiene."
