CP Kelco has developed a high powered xanthan gum that can be used in lesser amounts than previous versions to thicken and texturise products such as jams, sauces, yogurts or drinks.

The hydrocolloids firm has contracted Azelis to distribute the product globally. "Customers should be able to reduce their xanthan gum use level by 1525%,"​ said David Gray, regional business manager for Azelis Food & Health in UK & Ireland.

In addition, Gray said the product hydrated far more easily than alternatives, decreasing production time or change-over times from batch to batch, adding value to the bottom line.
