Ireland's leading manufacturer of premium quality baked goods, Coolmore Foods, has increased its baking capacity after adopting a serpentine continuous convection oven from Auto-Bake.

Coolmore Foods produces a range of home-style cakes, muffins and deep-fill fruit pies but was finding it increasingly difficult to meet demand. So it decided to switch from its existing rack oven operation to a higher-throughput continuous baking system.

Auto-Bake's Serpentine continuous baking technology was the answer. It has increased production capacity from 7,000 to 14,000 cakes per shift, while maintaining the home-style flavour and appearance of the company's products. And labour costs have been cut.

At the heart of the line is an ultra-compact Serpentine convection oven fitted with convection heating to maintain the all-over finish, colour and texture of the products. In addition to the oven, the Auto-Bake line includes a Serpentine ambient cooler, loading and unloading systems, and robotic de-panning.

Auto-Bake's flexible 'free tray' transport interface has enabled Coolmore Foods to use its existing rack-oven trays in the new continuous baking line.
