With healthy living here to stay, the demand for clean labelling has never been greater as consumers perceive additive-free products to be better for them.

In response to this, bakery ingredients firm Bakels has introduced a range of clean label products. Bread, roll and bun improvers (including a Soil Association-certified organic version) and a ready-to-use bun glaze make up the range.

Especially formulated for use in premium wrapped products, the products contain no emulsifiers (which are listed as E numbers) and also use non-hydrogenated fats, making them trans fat free.

Bakers do not need to change their recipes or processes when substituting traditional bread improvers with the clean label versions, says Bakels, and there is no loss of volume, texture or eating quality in the finished products.

The improvers also include a crumb softener, which increases softness over the shelf-life without using declarable ingredients.

Bakels Clean Label Improvers are available in 25kg bags, while the Clean Label Bun Glaze is available in a 12kg bag-in-box.

Also new to market from Bakels is Premium Muffin Concentrate: an ingredient that offers bakers the option to vary their product ranges. Bakels currently has eight recipe extensions available for the concentrate, including Lemon & Poppy Seed, Cranberry & White Chocolate and Blueberry.

"The concentrate is very cost effective as the baker is using his own commodity ingredients (flour, sugar, etc) which he has readily available," claims the firm.

The concentrate is available in 12.5kg bags.
