You can't beat the smell and taste of fresh baked bread, and bakery and confectionery ingredients supplier Puratos UK is hoping its new range will capture just that.

"O-tentic is a new active component derived from a natural fermentation process, that's designed to help manufacturers create a range of quality signature breads which deliver a traditional taste and aroma," says Bina Patel, category marketing manager of Puratos UK.

"O-tentic delivers all the benefits of a natural fermentation process - a full flavour, moist crumb, crunchy crust - but with none of the hassle," adds Patel.

The ingredient is well suited to long fermentation, as well as direct and retarded processing when used at 4% on flour weight.

Both the O-tentic Origin and O-tentic Durum variants contain natural dried ferments, ascorbic acid, enzymes and yeast.
