Dawn Foods is offering bakers an easy shortcut to making choux pastry products. The company's marketing director Maggie Dagostino explains: "Many of our customers find that making the pastry from scratch is extremely difficult, entailing many HACCP (hazard analysis critical control points) issues and requiring skills that are often not available."

By adding water, bakers can use the Dawn Choux Pastry Mix to produce instant ready-to-use choux batter in less than 10 minutes. After baking, the pastry turns a golden colour and can be filled with fresh cream and glossed to make éclairs and choux buns. The pastry can also be drizzled with melted chocolate for profiterole dishes or can be used to make more complex products such as chouquettes.

"The launch of the Choux Pastry Mix is the result of our significant investment in trade and consumer research and ingredients technology," says Dagostino.

Technical support is on offer from the Dawn Foods' sales team, which consists of seven bakers who work with customers to help them develop bespoke solutions.
