Ingredients supplier Puratos has launched a new ingredients system that makes bakery products taste fresher for longer.

"Our new ActiFresh solutions can increase the perceived softness and freshness of cakes, muffins and sponges by up to 40%, three weeks after baking," says marketing director Matt Crumpton. He claims that the range is also compatible with reduced fat recipes: "In oil-based cakes a fat reduction of 20% can be made without the perception of softness being lost."

Puratos ActiFresh solutions are available as powders, in 10kg to 800kg bags; concentrates; or complete mixes. They are also offered as fat-based margarine or shortening pastes, available in 10kg and 25kg boxes, or as liquids, which come in 200-1 and 1,000-1 drums.
