Pie and roll manufacturer has overcome difficulties by installing a new rack oven

Northamptonshire-based Gadsby's Bakery has installed ovens from equipment manufacturer Double D at its purpose-built bakery at Milk Park in Southwell.

The baker has installed two Revorack ovens, which its manufacturer says considerably simplifies the baking process and which can be used on any product.

Gadsby's, which makes breads, fruit pies and patisserie, chose the Revorack after experiencing difficulties with other rack ovens.

"Rolls, in particular, require a very short bake and have traditionally been difficult on a rack oven, but with Revorack there's a time delay at the front end. This means that the dough can set properly before the burner cuts in for the bake, so there's no 'pulling'," says md Terry Gadsby.

The oven comes in various sizes from a single up to 10 rack capacity.
