The ancient Aztecs invented the concept of chipotle when they discovered that the fleshy jalapeno chillies, treated with smoke had a longer shelf-life and took on an appealing aromatic smoky flavour.

Now seasoning manufacturer RAPS has developed a Mexican chipotle marinade, using smoked chillies as the main ingredient.

The water loss makes them hotter compared with fresh jalapenos. Fresh jalapenos have between 500 to 1,000 Scoville units (the measure for chilli heat), depending on the type, whereas chipotle have 5,000 to 10,000 Scoville units.

The smoky chilli flavour, combined with a pleasant heat makes chipotle marinade a universal spice for all Mexican or Tex Mex dishes.
