Bush tucker made easy with authentic flavoured meat rubs

Australia has its own mix of flavours that can be recreated using native raw materials

In addition to being recognised as the barbecue capital of the world, Australian cuisine is becoming increasingly popular over here. Some of its native herbs and spices, for example, give products unique character, which is why East Anglian Food Ingredients (EAFI) has introduced its range of Bushtucker Meat Rubs.

The rubs are sugar-based, producing good caramelisation and added flavour along with plenty of visual impact.

The rubs are simply sprinkled over and then worked into the meat, which is then ready to be cooked as usual on the barbecue.

Variants in the Australian range include: Native Mint & Spiced Tangerine, Lemon Myrtle, Coconut and Lime, Aniseed Myrtle & Horseradish, and Mountain Pepper & Leek.

But for companies looking to create recipes from scratch, EAFI also supplies the basic herbs and spices including akudjura (bush tomato), aniseed myrtle, forest berry herb, lemon myrtle, mountain pepper berry or leaf, native mint and wattleseed.
