Asian aromatics – the taste of the Philippines
Flavours from the Philippines are set to hit it big this year, claimed the BBC Food and Farming Awards’ judges, with its mix of Spanish, Chinese and Malay cuisine.
The dishes to look out for are adobo (pictured) – meats marinated in soy, aromatics and vinegar – and pork belly with liver sauce. Light fish stews are also a staple dish of Filipino cuisine.
Chef Paula McIntyre said: “The food is healthy, wholesome and exciting and follows on from Thai and Singaporean cuisine.”
