The International Dairy Federation (IDF) has called for the functional uses of salt to be taken into consideration, following World Health Organisation (WHO) recommendations to lower sodium in all foods.

WHO recommended daily salt intake be lowered to 5g a day from 6g a day, while the IDF said the role of salt in cheese making was crucial and needed to be understood in the exploration of such targets.


In a piece of research carried out by dairy experts and published by the IDF, the organisation said it recognised the impact of salt intake on human health, but added: “Salt has been used for thousands of years to preserve foods by inhibiting the growth of undesirable micro-organisms and for technological properties and functionalities.”

There were major differences in the role of salt in different food products, the research said and any reduction had to be made with care.
