Food plant hygiene could be improved with granulate

Kampffmeyer Food Innovation's new clean-label granulate is said to keep seeds, kernels and decorative toppings safely attached to dough pieces, minimising ingredient loss and improving plant hygiene.

Gecko Ultra is a wheatflour-based product that is refined in a way that boosts its adhesive properties. After being mixed with 10 parts water, it can be applied manually or automatically via roller, spray or immersion systems.

Seeded dough pieces treated with Gecko Ultra can withstand the mechanical stresses of processing virtually undamaged, according to Kampffmeyer. This represents a great advantage over the commonly used methods of attaching toppings to dough, such as treatment with water or water-guar mixes.

As well as reducing wastage, keeping seeds on the product means that less ingredients are dropped on site, which helps to improve industrial hygiene.
