Seafood manufacturer cuts production time by 83%

Integrating PDX Reactor technology with Mitsubishi Electric equipment has helped Japanese seafood processor Nissui to cut white sauce production time by 83%, reduce cleaning between batches and minimise energy use.

Nissui was buying in up to 20,000t of Béchamel sauce a year but wanted to bring production in-house. Its supplier’s three-stage process took 100 minutes to produce 1,000kg of sauce. Processing was a further 20 minutes of downtime per batch to clean off burn-on contamination.

Nissui chose the PDX Reactor steam cooker with a Mitsubishi Electric FX3 series compact programmable logic controller at its heart. This fluid processing system can homogenise, mix, heat and pump simultaneously. A steam-generated supersonic vapour flow and shockwave can be used to transport materials and entrain or mix multiple flows. There are no moving parts to clog or block and the unrestricted bore makes cleaning easy.

The Reactor avoids ingredient burn-on, which means no product loss, no compromise to flavour or texture and no downtime for removing residue. There are significant energy savings too.

The improved mixing has cut flour use by 20%. Nissui is saving 300t of flour and approximately 2.1Ml of milk a year.
