EPP md Keith Stalker said: “Cake recipes used by bakers are becoming increasingly complex and varied. Precise control of the mixing process is essential to consistently produce batters with the exact amount of aeration.”
VMI collected data from more than 30,000 mixers it supplied to bakeries and worked with university scientists to model and master the essential parameters in planetary mixing systems.
Stalker added: “Bakers know that in a planetary mixer the mixing or whipping tools rotate on their own axes and at the same time on a common axis, which results in batters being quickly produced. The Ultimix enables bakers to have full control over the ratio, or more simply the rotation speeds of the tools and the revolution speed of the satellite and power consumption.
"The HDPE scraper is also able to scrape the entire profile of the bowl which results in better homogenisation of the mix.”
