Britain has some bright young bakers, according to Ben White, sales director at Marshfield Bakery


I read with interest your article 'Bakery boss takes on Danish apprentices'​ in the April issue of Food Manufacture. This told the story of Lise Madsen's struggle to source UK baking apprentices and set up links with UK colleges and universities. She ended up sourcing people from her native Denmark and also France.

We are also a craft bakery supplying a similar market to hers (but not organic) and we have found our local colleges and universities to be most interested in setting up links with us. In fact, we work very closely with baking and food science students offering not only tours, but work placements and leading on their projects and setting them challenges.

Last year we employed (on a full-time salary position) our current new product development technologist as a direct result of our links with a local university (Bath Spa University) and we also employ apprentices on a programme from City of Bristol College.

I just thought you might like to know that not all is doom and gloom in Britain regarding apprentices and students. We do have some very willing colleges and universities, as well as some bright young bakers.
