To meet the continued demand for free-from products, ingredients firm Brazilian Flavours has launched a gluten-free dough ball mix.

The firm's owner and creative chef, Isabel Gordon, said: "Our products are naturally gluten-free. The market is always looking for free-from alternatives that can deliver on taste and give the same textural qualities of standard gluten- and wheat-based products."

Created from a specialist blend of native Brazilian root flavours, Isabel's Naturally Free From dough ball pre-mix is a home-bake product that mimics the taste and texture of authentic Italian ciabatta bread.

When combined with the required wet ingredients, the firm says the product's balance of flours comes together to form a dough that has the same organoleptic qualities, pliability and elasticity of conventional gluten-based dough.
