Healthy popcorn is a breath of fresh air with less fat

Diva Popcorn is a new flavoured popcorn that boasts a healthier cooking process: it has been air-popped rather than oil-popped, which means that it has 33% less fat, according to its manufacturer, Fresh Marketing.

The firm's director and founder, Barney Mauleverer was inspired by the range and quality of flavoured popcorn sold in the US and says it is the first firm to make air-popped flavoured popcorn in the UK.

"Our process involves blowing the corn through a huge hot air machine in which it pops," he said. "It just has a very light coating of oil to allow the flavour to stick to the popcorn."

Mauleverer says the popping process is straightforward, it was just a matter of getting the right machinery.

"Air popping is dead easy,"​ says Mauleverer. "You could even pop corn into a butterfly or mushroom shape at home with a hair dryer."

Once he had imported the machinery from the US, his next challenge was getting an even coating of flavouring.

"We mix the seasoning in a small amount of oil to create a slurry so that it pretty much covers the whole area,"​ he explained.

Fresh Marketing believes that increasing numbers of firms will be looking at this category as demand for healthier snacks grows.

The firm is experimenting with ways to enhance the crunchiness of the popcorn and reduce the polystyrene element to its texture.
