Cleaner work with cheese
Growth in demand for premium speciality breads has created challenges for bakers in terms of both production and costs. Toppings like butter, cheese and garlic can be extremely volatile, and if they drop into the bottom of an oven can become baked onto the oven floor and caramelise, causing a serious fire hazard.

JBT FoodTech's Double D continuous baking oven features an integral clean-in-place (CIP) system to address this issue. A novel system of sparge pipes deliver a pressurised, heated caustic solution throughout the oven, cleaning it thoroughly. The oven also features a water bath which collects and removes any volatile debris or residue.

"The CIP system is a major benefit to industrial bakers who need to adhere to stricter hygiene and safety standards, while keeping costs under control," ​says JBT FoodTech's UK regional sales manager, Barry Jackson.

"These features significantly reduce any potential fire risk, which can also mean reduced insurance premiums. They also keep the oven clean and hygienic, as well as enhancing the operational efficiency of the airflow system by keeping the air delivery louvres free from air-borne fat. In some cases this can save even more resources by reducing cleaning downtime by half."

The company has also developed a high temperature version of the oven for pizza production which can bake a 10-inch pizzas in one to two minutes at 400°C.
