Recent research conducted by Create Flavours indicates that the demand for 'natural' flavours will increase by over 35% over the next three years. With this in mind, the firm has developed a range of 'all-natural' dairy enhancers.

The new products perform through a wide range of applications and process conditions. They are particularly suitable for adding flavour and mouthfeel to reduced fat food products. Create has tested the natural flavours in a range of products, including ice cream, desserts and yogurts.

"The flavour and mouthfeel profiles that we've achieved have been very encouraging," says applications manager, Darrin Pringle. "One of the key things we set out to achieve was to develop a range of products that work both alone and in combination with other flavours, such as strawberry, chocolate and vanilla."

The flavours are declarable as 'natural flavouring' and are available in both liquid and spray dried forms.
