Responding to consumer demand for products that contain no artificial ingredients and lower fat, salt and sugar content, without impacting on taste is a major challenge for manufacturers. The bakery industry is under particular pressure to achieve salt reduction targets set by the Food Standards Agency by 2012.

Synergy has produced a range of ingredients to help manufacturers reduce fat, salt and costs. Saporess Plus provides a natural umami flavour profile - a taste characteristic of monosodium glutamate (MSG) - and the company claims it can reduce MSG and salt content by up to 30%.

The ingredient also benefits from a block building capability - for example, Saporesse Cheese Ultimate combines yeast extract, cheese and flavouring in a single ingredient. This allows manufacturers to cut down on the manufacturing processes and costs involved with refrigeration and storage.

The range also features dairy ingredients, including products such as Premium Cheese Paste, which can reduce cheese content by up to 50% in certain food applications.
