The ability to provide healthier products has moved up the agenda for British Sugar, the leading supplier of sugar to the UK food and drink industries.

It has responded to consumer demand by adding to its dry sugar range a re-formulated moisture-resistant sugar, MR Sugar, that contains a non-hydrogenated vegetable oil.

MR Sugar has been developed to enable bakers to enhance decorative coatings and toppings on cakes, pastries and desserts, where packaging or storage conditions require moisture resistance. With a particle size similar to caster sugar, MR Sugar will not dissolve and so enhances appearance. It can extend a finished product's shelf-life because it contains a coating of a re-formulated, non-hydrogenated fat that does not contain trans fats. It is also free-flowing and dust-free and can be sprinkled on the surface of warm or cold cakes where it will remain - to give the freshly produced appearance that consumers like.

British Sugar commercial product manager Ian Hollyman says: "MR Sugar will not only outperform ordinary caster sugar, but it also has the clean taste of sugar with none of the aftertastes often associated with alternatives such as dusting powders.

"MR Sugar retains its texture and visual impact on the surface, making cake and pastry products more attractive at point of sale and when served."
