Cocoa-Mate: your new best friend?
Faced with an anticipated drop in cocoa production again this year, David Michael & Co in the US is reminding manufacturers of the benefits of its cocoa extender, Cocoa-Mate, which is functionally capable of replacing up to 30% of the cocoa powder used in finished food products.
Available as either a natural and artificial or artificial flavour in a liquid or powder form, Cocoa-Mate can be customised for a number of applications, including: ice cream, yoghurt, beverages, puddings, toppings and bakery goods.
The company originally introduced the line of cocoa extenders in response to a cocoa shortage in 2002.
