A new range of high-output ice machines for plant bakers has been launched by Hubbard Ice Systems.

Used as a coolant during mixing, soft shafts of ice keep dough at low temperatures without the need for refrigeration and are suitable for even the most delicate products.

Hubbard's Eve machines, available as water or air-cooled models, can manufacture up to 24,000kg a day.

"Most customers will have unique requirements," says Hubbard's commercial director Chris Davis. "In almost every case we configure the standard components to produce a custom-made solution."

Meanwhile, researchers at Campden & Chorleywood have successfully used powdered ice to prehydrate flour in an attempt to cut energy costs by reducing time taken in the mixing process.

Bread produced with shorter mixing times from dough made with prehydrated flour showed better volume than that made with conventional dough, but with more open crumb texture.
