Castle MacLellan of Kirkcudbright is moving into ultrasonic surgery -- but only for the vast range of Scottish pâtés it produces for hundreds of direct, trade, retail, and foodservice customers.
The installation of a £100,000 Newtech ultrasonic slicing machine will increase productivity and hygiene standards, and ensure cleanly cut slices from a creamy parfait to a coarse meaty farmhouse pâté
General manager Elaine McConnell says: "We never like to stand still. We have been developing the new recipes on-site, and developing the best methods of slicing for products for foodservice customers."
Castle MacLellan, a member of the Kavli group, makes 20t of pâté a week and has a £6m turnover.
