The soft approach
Large craft and industrial bakers will benefit from the Kemper Soft Star dough dividing and remoulding machine, according to bakery equipment supplier Eurobake.
The Soft Star is ideal for the production of soft rolls, burger buns and doughnuts and can produce up to 24,000 pieces an hour.
It has a hydraulic dividing system with a gentle action that can handle doughs of very soft consistency. Pieces are fed to an intermediate proofer before moulding and cutting or stamping and seeding prior to final proofing.
An automatic depositor ensures dough pieces are positioned in a programmed sequence on to trays.
