Wok-style braising pans are available from DC Norris & Co (DCN) which can reach high temperatures in half the time of conventional cooking/simmering equipment. The DCN 2700 wok is said to be ideal for preparing small batches of ethnic or ready meals.

The woks are made in stainless steel and operate between 4.5 and 8 bar steam pressure. They come with either electric or manual tilt. Available with 100 to 200 litre capacity, temperature logging is optional. Programmable agitation is provided with easy-to-remove agitators. Different blades and variable speeds can also be accommodated.

DCN also supplies its 3000/3001 (500 litre and 750 litre capacities respectively) cook-chill system for cooking and blanching vegetables, rice and pasta. Both models can be fitted with two or three vessels depending on whether cook-chill or cook-quench-chill is required. Equipment can be recipe controlled for different products and fitted with automatic filling and discharge if required.

Other equipment distributed by DCN includes the Easy range of horizontal pasteurisation and sterilisation retorts. The three-in-one system offers saturated steam for cans, a shower system for bottles and jars and a steam and air system for trays and pouches.
