How The Cookie Man chills out in deepest Surrey
KDH Projects has completed the installation of a £105,000 blast chiller for Esher-based food manufacturer The Cookie Man, which supplies of a range of baked products to leading supermarket chains.
The Cookie Man makes cookies, cakes, muffins, loaf cakes and flapjacks and wanted a chiller with a high degree of flexibility. It needed the chilling room to be designed and built around the exit of an existing in-line oven, so that product coming from the oven was sufficiently cooled before packaging.
KDH decided to instal a blast chiller with both ambient cooling and refrigeration capabilities. The final air velocities were based on data established by Cambridge Refrigeration Technology to cool down products from oven temperature to packing temperature at a constant oven belt speed.
Cooling is provided by a direct expansion system. The cookie blast chill provides air velocities over the product trays of 2-4m/s. Three fans supply 21m³/s of refrigerated air.
