A breakthrough solution from National Starch Food Innovation will allow dairy manufacturers to maintain eating quality in yoghurts, while significantly reducing costs.
N-Creamer 221 is a speciality starch that mimics the functionality of milk solids in regular and low fat dairy products. "It offers a solution to manufacturers wishing to break free from costly milk solids, without compromising on product quality," claims the firm.
"In an intensely competitive environment, manufacturers have traditionally turned to milk solids for textural enhancement, but with cripplingly high prices, the need for a viable and cost-effective alternative is urgent."
The new ingredient delivers a smooth, creamy and full-bodied texture as well as product stability, and does not impact negatively on the end product's taste profile, claims National Starch.
